- 1 large egg
- 3 large super ripe bananas
- 1/2 cup of applesauce
- 1/4 cup of maple syrup or honey
- 3 tbsp of melted coconut oil
- 1 tsp pure vanilla extract
- 1 tsp of baking powder
- 1/2 tsp of baking soda
- 1/4 tsp of salt
- 1 1/3 cups whole wheat flour
- Preheat the oven to 375 degrees F.
- Spray a non-stick muffin tin with cooking spray and set it aside.
- Beat the egg lightly in a large mixing bowl.
- Add the bananas and mash them well, along with the other ingredients except flour. Then, whisk them to mix them together.
- Gently stir in the flour until its well incorporated, but do not overmix.
- Use a regular ice cream scoop to fill the muffin tins with batter and bake for 22 minutes
- Insert a toothpick in the center. If it comes out clean, the muffins are ready.
- Let muffins cool for about 5 minutes.
